Description: Tony Smith image Alamy 3DM97YT - A wide, documentary interior view of Stockport Market Hall, capturing the mix of everyday retail and food trading that defines a traditional British covered market. The scene looks along a main aisle beneath the high Victorian roof structure, with curved iron beams, skylights and red-painted framework creating a distinctive sense of place. On the right, the Ted's Cards stall dominates the view with dense racks of greetings cards and display stands arranged for easy browsing, alongside visible signage for TED'S CARDS and related gift items. The card displays add a colourful, graphic texture that reads immediately as a classic market staple, especially useful for editorial stories about independent traders and town-centre shopping.
To the left, the Cheshire Meats butcher counter is clearly signed, with a traditional meat-shop frontage and a display area that suggests fresh produce and local food shopping. A mannequin or shop figure in a striped apron stands near the butcher area, adding a slightly quirky, old-fashioned market character that reinforces the theme of long-running local businesses. The aisle layout, open floor space and practical stall design communicate the functional rhythm of market life: browse, pick up essentials, grab a card, and carry on down the row.
The lighting is natural and even, likely cold-season daylight filtering through the roof, giving the scene a realistic, un-staged atmosphere. Editorially, the image works for themes such as UK high street resilience, community commerce, affordable shopping, local food retail, and the role of historic market halls as social hubs. It is also a strong Stockport identifier because the stall names and the architectural structure make the location feel specific and documentary, rather than a generic indoor shopping setting.

Description: Tony Smith image Alamy 3CPAXR7 - A closed independent butcher shop on Meath Street in Kilmainham, Dublin 8, Ireland, with a colourful graffiti mural painted across the metal roller shutter. Traditional signage advertising beef, pork, lamb, and chicken remains visible above the shutter, creating a strong visual contrast between long-established family retail and contemporary urban street art. The shuttered premises reflect wider themes of retail decline, changing high streets, and the evolving character of inner city Dublin, while also capturing everyday street culture and community identity within this historic part of the city.

Description: Tony Smith image Alamy 2RECE42 - A pig roast or hog roast is an event or gathering which involves the barbecuing of a whole pig.
Pig roasts, under a variety of names, are a common traditional celebration event in many places including the Philippines, Puerto Rico and Cuba. It is also popular in the United States, especially in the state of Hawaii (a luau) and in the Southern United States (pig pickin'). In Southeast Asia, a pig roast is a staple among the Buddhist, and Christian communities, notably among Catholic Filipinos and Hindu Balinese people, or Buddhist Chinese people.
In the UK, the tradition of pig roasting, more commonly known in the UK as a hog roast, is popular on many occasions, particularly parties and celebrations. It is usually an outdoor event, and a staple meal at many show events. The tradition is to roast either on a spit, turning the pig under a flame, or in a large oven in a roasting pan
roasting pigs around 130 lbs (60 kg) in weight are common in the UK. The pig is normally roasted in a propane gas machine. The pig's skin is scored with a sharp blade and covered in water and salt to make the crackling. In ancient times, going all the way back to the Saxons, roasting a wild boar was often the centerpiece of a meal at Yuletide, with Yule being Freya's feast. The head was often the greatest delicacy, as evidenced by the survival of the Boar's Head Carol.

Description: Tony Smith image Alamy 2RAP3B0 - St Helens is a large town in Merseyside, England. It is the administrative centre of the wider Metropolitan Borough of St Helens which covers a larger area around the town.
The town had a population of 102,629 at the 2011 Census, the wider borough around 183,200 at the 2021 Census.
It is 6 miles (10 kilometres) north of the River Mersey, in the south-west part of historic Lancashire. The town was formerly within the historic county's ancient hundred of West Derby as a small settlement in the township of Windle. By the mid 1700s, it had become larger than Windle and (by 1838) it was formally made responsible for the administration of Windle and the three other townships of Eccleston, Parr and Sutton. In 1868, it was incorporated as a town with a municipal borough. The borough later became a county borough in 1887 and replaced by a metropolitan borough with an expanded administrative responsibility for nearby towns and villages in 1974.
Coal mining and glassmaking were the significant sectors that caused growth into a town during the Industrial Revolution of the 18th and 19th centuries. Glass producer Pilkington is the town's only remaining large industrial employer
previously, it was home to Beechams, the Gamble Alkali Works, Ravenhead glass. United Glass Bottles, Triplex, Daglish Foundry They were also other sectors: sail making and other cotton and linen work which lasted until the mid-19th century

Description: Tony Smith image Alamy 2PK3EX3 - Bully beef (also known as corned beef in the United Kingdom, Canada, Australia, Singapore, Indonesia and other Commonwealth countries as well as the United States) is a variety of meat made from finely minced corned beef in a small amount of gelatin. The name bully beef likely comes from the French bouilli (meaning boiled) in Napoleonic times, or possibly from the head of a bull depicted on the popular Hereford brand of canned corned beef. The cans have a distinctive oblong shape. Bully beef and hardtack biscuits were the main field rations of the British Army from the Boer War to World War II. It is commonly served sliced in a corned beef sandwich. Potato-based dishes, such as hash and hotch-potch, in which the potatoes and beef are stewed together, and corned beef hash, where pre-boiled potatoes and corned beef are mixed with Worcestershire sauce then fried, are also made. Tinned corned beef is also used in France. Some places where British troops were present in the 20th century (especially during World War II), such as Malta, have adopted bully beef as part of their national cuisine. In February 2009, the British Defence Equipment and Support announced that they would be phasing out bully beef from ration packs as part of the introduction of the new Multi-Climate Ration Packs until this change was reversed due to backlash
The next development was the key open can. Both J. Osterhoudt, in 1866, and Ars??ne Saupiquet in 1882, had patented key open cans, with possibly only Saupiquet achieving commercial success, but it was not until a cheaper method of production was developed by John Zimmerman in 1892[24] that American companies adopted the innovation, with Cudahy's, Libby's and Armour soon producing corned beef in the easy to open tins. The British Government was slow to adopt the new cans, and in 1898 the Civil and Military Gazette saw it as scandalous that they were still supplying meat in unget-at-able tins when the new cans were available

Description: Tony Smith image Alamy 2PK2B05 - Spam is a brand of salty processed canned pork made by Hormel Foods Corporation. It was introduced by Hormel in 1937 and gained popularity worldwide after its use during World War II. By 2003, Spam was sold in 41 countries (and trademarked in over 100) on six continents. In the U.S., Hawaii is the state with the highest per capita consumption of Spam, which has become an ingredient in Hawaiian cuisine (like sushi).
The generic form of Spam may be sold in cans as pork luncheon meat. Since its invention, it is now available in different flavours and using different meats. Like most hotdogs, Spam is precooked, making it safe and edible to eat straight from the can, but it is often cooked further to improve some characteristics of its palatability.
Spam's basic ingredients are primarily pork shoulder and ham, with salt, water, modified potato starch (as a binder), sugar, and sodium nitrite (as a preservative). Natural gelatin is formed during cooking in its tins on the production line. Concerns about Spam's nutritional attributes have been raised, in large part due to its high content of fat, sodium, and preservatives.
Spam has affected popular culture, including a Monty Python skit, which repeated the name many times, leading to its name being borrowed to describe unsolicited electronic messages, especially email. It is occasionally celebrated in festivals such as Austin's Spamarama.

In accordance with the FIC Regulations, the indication of the country of origin or place of provenance of a food shall be mandatory where failure to indicate this might mislead the consumer as to the true country of origin or place of provenance of the food. Consumers might be misled without this information, for example a Melton Mowbray Pork pie which was made in Italy.
Under the FIC Regulations there are specific origin rules which must be adhered to, including the Country of Origin for Primary Ingredients and Country of Origin for Certain Meats.
Find out when you must label your meat, fish or seafood product with its country of origin (Opens in a new window).
In NI, EU Country of Origin rules, as applied by the Northern Ireland Protocol (NIP), are applicable for food placed on the NI market. Where EU Law requires an indication of a Member State in respect to country of origin, food businesses must ensure that where food has originated in Northern Ireland, such indications should be in the form UK(NI) or United Kingdom (Northern Ireland).

Description: Tony Smith image Alamy 2K6GW3J - Angus Steakhouse is a restaurant chain of steak houses in central London. In 2001, there were about 30 outlets
five remain open as of July 2020. The name reflects Aberdeen Angus, a common breed of beef cattle. Some restaurants still retain the former trading name, Aberdeen Steak Houses, on their signage, as of September 2016.
Aberdeen Steak Houses was started in the early 1960s by Reginald Eastwood (born c.1913), who had started in business aged 15 as an apprentice butcher.[citation needed] Eastwood's vision was for a more modern version of the earlier chop-house grills, and was influenced by American steak houses. The d??cor was opulent, with plate glass windows and red velour banquettes. Menus included trendy dishes like prawn cocktail and Black Forest gateau
By the 1970s, the group was focused more on tourist trade, with many branches in the West End to attract those attending theatre or musical shows
In 1984, the group was sold to Ali Salih, a Turkish businessman with a low public profile. The menu and d??cor showed little update since the 1960s, and the brand got a reputation as tourist traps for Its business, along with the wider UK beef industry, was hit in the 1990s by bovine spongiform encephalopathy,(BSE) then by foot and mouth disease in 2001.It made a loss of ?3m in 2000
decline in American tourists after the September 11 attacks was also cited by Salih after the group went into receivership in October 2002, with ?7m in debt.
In 2011, actor and comedian David Mitchell championed the cause of Aberdeen Angus Steak Houses in his opinion column in The Guardian, proposing that they be a nominee for a British World Heritage bid, citing them as being unique to British culture because of their proud heritage of serving shoe leather with B??arnaise sauce to neon-addled out-of-towners

Description: Tony Smith image Alamy 2K7NBHP - In late 1994, a number of people began to show symptoms of a neurological disease similar to CJD, a fatal disorder that occurs naturally in a small percentage of people, though usually only later in life. This new form of the disease would go on to be identified as variant CJD (vCJD), occurring primarily in younger people and caused through eating BSE-infected meat. The first known death from vCJD occurred on 21 May 1995, when the 19-year old Stephen Churchill died although the UK government continued to emphasise the safety of British beef and, in September 1995, concluded that there was 'insufficient evidence' to link BSE and vCJD. It was not until 20 March 1996 that Stephen Dorrell, the Secretary of State for Health announced that vCJD was caused by eating BSE-infected meat.
177 people (as of June 2014) would go on to contract and die of the disease.
Regulations and bans of British beef
When BSE was identified, the United States banned the importation of British cattle in 1989, and 499 cows who had been recently imported from the United Kingdom were killed. The United States slaughtered an additional 116 British cows in 1996.
Between December 1997 and November 1999, the British government banned the sale of beef on the bone.
A week after Dorrell's announcement, on 27 March 1996, the European Union (EU) imposed a worldwide ban on exports of British beef. The ban would go on to last for 10 years before it was finally lifted on 1 May 2006, although restrictions remained on British beef containing vertebral material and beef sold on the bone. The ban, which led to much controversy in Parliament and to the incineration of over one million cattle from at least March 1996, resulted in trade controversies between the UK and other EU states, dubbed a Beef War by media. France continued to impose a ban on British beef illegally long after the European Court of Justice had ordered it to lift its blockade, although it has never paid any fine for doing so.

Description: Tony Smith image Alamy 2M07AFJ - A full breakfast is a substantial cooked breakfast meal, often served in the United Kingdom and Ireland, that typically includes back bacon, sausages, eggs, black pudding, baked beans, some form of potato, tomatoes, mushrooms, toast, and a beverage such as coffee or tea. It appears in different regional variants and is referred to by different names depending on the area. While it is colloquially known as a fry-up in most areas of the UK and Ireland, it is usually referred to as a full English (often full English breakfast), a full Irish, full Scottish, full Welsh, and Ulster fry, in England, the Republic of Ireland, Scotland, Wales, and Northern Ireland, respectively
It is so popular in Great Britain and Ireland that many cafes and pubs offer the meal at any time of day as an all-day breakfast. It is also popular in many Commonwealth nations. The full breakfast is among the most internationally recognised British dishes along with bangers and mash, shepherd's pie, fish and chips, roast beef, Sunday roast and the Christmas dinner
The protein-centric full breakfast is often contrasted (e.g. on hotel menus) with the lighter, carbohydrate-based alternative of a continental breakfast.
Breakfast cereal (or porridge), often precedes the breakfast dish, and the meal typically concludes with buttered toast spread with marmalade, jam, honey or other conserves, together with additional tea and coffee.

Description: Tony Smith image Alamy 2AGP2WB - Beef Cuts: loins, shanks, briskets and chuck - if all the different cuts confuse you when deciding what to cook
A cow is broken down into what are called primal cuts, the main areas of the animal which include the Loin, Rib, Round, Flank, Chuck, Sirloin, Brisket and more.
These primal cuts are then broken down into sub-primal cuts, including specific steaks and chops: flank steak, flat iron steak, filet mignon, rib eye.
These are usually leaner cuts of beef, best grilled or fried and work better with high heat. It's the T Bone and Porterhouse Steaks, the Tenderloins, cuts of meat that respond better to dry heat cooking.
Filet Mignon, Bavette, Tri-Tips, Strip Steak and Roasts - coming from the rear of the animal, these are also leaner cuts, certainly not the best beef choice f you want to slow cook. The Sirloin family is best for grilling, skillet and stir-fry with high, dry heats.
Ribeye Filet, Ribeye Cap, Ribeye Steak. These cuts are getting fattier, meaning some of them are better for slow cooking and roasting. Not all the cuts in the rib family work well with slow cooking methods: Ribeye Steak, for example, will always kick better grilled or fried in a skillet.
Blade, Chuck Eye, Country-Style Ribs, this is where the slow goodness starts to come to play with some good cuts for pot roasts. Don't get us wrong, you'll also find lots of chuck cuts are good for grilling: Top Blade, Ranch Steak, Shoulder Steak. If you only understand one section, Chuck is the one as there's a cut for every style of cooking.
You can't really go wrong with brisket, whether you choose Flat or Point cut - they both want to be slow cooked. For us, Brisket Point works better than Brisket Flat, the flat cut is a bit leaner. Just be careful when slow cooking brisket, it's a forgiving cut but the margin between delicious juicy and chewy dry is small.
Beef Cuts: Brisket
Round cuts
Coming from the back legs of the cow, this is a part of the animal that usually provides leaner cuts

Description: Tony Smith image Alamy 2K3XN3D - A pig roast or hog roast is an event or gathering which involves the barbecuing of a whole pig.
The tradition of the hog roast goes back millennia and is found in many cultures. There are numerous ways to roast pork, including open fire rotisserie style roasting, and caja china style box grilling. Many families traditionally have a pig roast for Thanksgiving or Christmas.

The revival of the Altrincham Market is nothing short of remarkable. From 1290 (yes, 1290!) the market had been at the centre of community life in Altrincham. Throughout the centuries, the market would have been where townsfolk gathered to buy goods, make a living, and spend time in the company of their neighbours.
And yet, the second half of the 20th century brought a period of stagnation. With the fortunes of the town on the downturn and the population size decreasing year over year, the historic market was being run by the council with little love or care. In fact, around a decade ago, Altrincham was voted as having the worse high street in Britain.
So, what has changed?
Well, Nick Johnson came onto the scene. Nick was a property developer and saw something in Altrincham that others failed to spot. In 2013, he won the contract to run the market and quickly set about changing the face of it and in turn Altrincham.
Nick gave the Victorian building a makeover. Cleaning it from top to bottom and restoring some features that had been neglected. He then got to work contacting some of the area's best, local food vendors.
Nick did the same in Manchester city centre with the Mackie Mayor food hall, the big sister of Altrincham Market House. We previously wrote about Mackie Mayor here.
Food And Drink At Altrincham Market House
Since it reopened in 2014, locals and visitors have filled the food hall week after week, and it should come as no surprise ? the food on offer is second to none!
Market House is home to 10 indie food stalls, including Honest Crust, Wolfhouse Kitchen, Tender Cow, Jack in the Box, Reserve Wines, Great North Pie Co., Sam Joseph, and Market House Coffee.
Jack in the Box is an award-winning producer of real ale and cider that operate across the Mackie Mayor and Altrincham

Description: Tony Smith image Alamy ED9ETJ - A mince pie is a small British fruit-based mincemeat sweet pie traditionally served during the Christmas season. Its ingredients are traceable to the 13th century, when returning European crusaders brought with them Middle Eastern recipes containing meats, fruits and spices.
The early mince pie was known by several names, including mutton pie, shrid pie and Christmas pie. Typically its ingredients were a mixture of minced meat, suet, a range of fruits, and spices such as cinnamon, cloves and nutmeg. Served around Christmas, the savoury Christmas pie (as it became known) was associated with supposed Catholic idolatry and during the English Civil War was frowned on by the Puritan authorities. Nevertheless, the tradition of eating Christmas pie in December continued through to the Victorian era, although by then its recipe had become sweeter and its size reduced markedly from the large oblong shape once observed. Today the mince pie remains a popular seasonal treat enjoyed by many across the United Kingdom.

Description: Tony Smith image Alamy DCE7J2 - The wild boar (Sus scrofa), also known as the wild swine, Eurasian wild pig, or simply wild pig, is a suid native to much of Eurasia, North Africa, and the Greater Sunda Islands. Human intervention has spread its distribution further, making the species one of the widest-ranging mammals in the world, as well as the most widely spread suiform.[4] Its wide range, high numbers, and adaptability mean that it is classed as least concern by the IUCN and it has become an invasive species in part of its introduced range. The animal probably originated in Southeast Asia during the Early Pleistocene, and outcompeted other suid species as it spread throughout the Old World.
As of 1990, up to 16 subspecies are recognized, which are divided into four regional groupings based on skull height and lacrimal bone length. The species lives in matriarchal societies consisting of interrelated females and their young (both male and female). Fully grown males are usually solitary outside the breeding season. The grey wolf is the wild boar's main predator throughout most of its range, except in the Far East and the Lesser Sunda Islands, where it is replaced by the tiger and Komodo dragon, respectively. It has a long history of association with humans, having been the ancestor of most domestic pig breeds and a big-game animal for millennia. Boars have also re-hybridized in recent decades with feral pigs
these boar?pig hybrids have become a serious pest animal in Australia, Canada, United States, and Mexico.

Sons in Cuddington, Northwich, Cheshire UK. It makes a refreshing change to visit a real butcher, rather than the pre-packaged and shrink wrapped conveyor belt plastic meat from the supermarket, although in In English, the name Lyulph is a variant of Lyulf: A compound of the Old English words for flame and wolf.
He was named after Arthur Lyulph Stanley who was a relative of his father and Liberal elected MP for the mainly rural parliamentary constituancy of Eddisbury. Arthur awarded KCMG (14 September 1875 \u2013 22 August 1931), also 5th Baron Stanley of Alderley and 4th Baron Eddisbury, was an English nobleman and Governor of Victoria from 1914 to 1920. Thus a suitable role model to name your child after I guess. The name Lyulph has origins in Scandinavia.
The butcher shop in Cuddington has a long history and in the 1930's there was a fatality when a butcher's boy, Les Watson (brother of Joan Underwood) was involved in a collision with a mail van while riding his delivery bicycle on Swan Hill.
If you would like to visit the shop for excellent local meat, excellent homemade pies and sausages etc, it is at 18 Warrington Road, give them a call on 01606 883162 for opening hours.

Description: Tony Smith image Alamy CF2205 - A trolley of birthday cakes in a UK Tesco store.
A supermarket, a form of grocery store, is a self-service store offering a wide variety of food and household merchandise, organized into departments. It is larger in size and has a wider selection than a traditional grocery store, also selling items typically found in a convenience store, but is smaller and more limited in the range of merchandise than a hypermarket or big-box store.
The supermarket typically comprises meat, fresh produce, dairy, and baked goods departments, along with shelf space reserved for canned and packaged goods as well as for various non-food items such as household cleaners, pharmacy products and pet supplies. Most supermarkets also sell a variety of other household products that are consumed regularly, such as alcohol (where permitted), medicine, and clothes, and some stores sell a much wider range of non-food products.
The traditional suburban supermarket occupies a large amount of floor space, usually on a single level. It is usually situated near a residential area in order to be convenient to consumers. Its basic appeal is the availability of a broad selection of goods under a single roof, at relatively low prices. Other advantages include ease of parking and frequently the convenience of shopping hours that extend far into the evening or even 24 hours a day. Supermarkets usually allocate large budgets to advertising, typically through newspapers. They also present elaborate in-store displays of products. The stores are usually part of corporate chains that own or control (sometimes by franchise) other supermarkets located nearby?even transnationally?thus increasing opportunities for economies of scale.
Supermarkets typically are supplied by the distribution centres of their parent companies, usually in the largest city in the province.

Description: Tony Smith image Alamy 2BE34E1 - A pig roast or hog roast is an event or gathering which involves the barbecuing of a whole pig.
Pig roasts, under a variety of names, are a common traditional celebration event in many places including the Philippines, Puerto Rico and Cuba as well as the US state of Hawaii (a luau) and in the Deep South (pig pickin'). A pig roast is a traditional meal in the Balkan states of Serbia and Montenegro, and it can often be found on the menu of traditional taverns and bars: kafana. In Southeast Asia, a pig roast is a staple among the Hindu, Buddhist, and Christian communities, notably among Catholic Filipinos and Hindu Balinese people, or Buddhist Chinese people.
The pig is normally roasted in a gas propane machine.

Description: Tony Smith image Alamy 2PYKTFT - L?ngos is a typical Hungarian food. Today it is a deep fried flatbread, but in the past it was made of the last bits of the bread-dough and baked at the front of the brick or clay oven, to be served hot as the breakfast of the bread-baking day
The name comes from l?ng, the Hungarian word for flame.
Up to the mid 20th century, bread was baked once a week due to the cost of heating up the large oven and the lengthy process kneading up to 80 pounds of dough. Because the bread loaf, typical to Hungary, was 6 to 10 pounds each, traditionally they used to bake smaller (1-2 pounds) cip?? rolls for the evening and the next day. The name l?ngos (literally meaning flamed) comes from baking these flat breads in the morning while the oven was still heating up. L?ngos were also used as a side to lunch
The dough for l?ngos is made of water or milk, flour, yeast, and salt. The ingredients are worked together either by hand or a kneading machine. As the yeast starts to metabolize the carbohydrates in the flour, carbon dioxide is released which causes the dough to rise, creating the air bubbles in the l?ngos. The dough is basically the same as pizza dough, but it is not baked but fried in oil. Adding sour cream, yoghurt or mashed potatoes to the dough is optional but highly encouraged, in the latter case it is called potato l?ngos (in Hungarian krumplis l?ngos)
In the early 2000s, some people built small, portable clay ovens and started to sell oven baked l?ngos, called keny??rl?ngos (bread-l?ngos) on festivals and fairs. Although reminiscent of the traditional l?ngos, it is more like a pizza with sour cream, onions and bacon.
L?ngos is popular all year long. As it is a rather affordable and simple food, it is often sold around bus stations, fairs, local markets and all over Eastern European countries during local celebrations or sport events. It is sold at many fast-food restaurants not only in Hungary but also in Austria.

Construction of the northbound services began in early 2013, and they officially opened on 7 May 2014. Construction of the southbound services commenced in March 2014 and they opened on 19 May 2015
In September 2009, the independent motorway services operator Westmorland Motorway Services Ltd, jointly with a local charitable trust, Gloucestershire Gateway Trust, submitted plans for a service area at Matson for public consultation. The plans were for a business operated in a similar manner to Tebay Services on the M6 in Cumbria, with much of the food and produce on sale being sourced from local suppliers
The operator promised not to host chain coffee shops, fast-food outlets, or video and gambling machines
The service area supports the Gloucestershire Gateway Trust in assisting the business to provide good jobs for more deprived areas of Gloucester, and to support local social regeneration schemes.
The 2019 Motorway Services User Survey found that Gloucester's southbound side was in the top five motorway services in the UK for customer satisfaction
The District Council was informed at the end of February 2011 that Roadchef and Welcome Break (the operators of Strensham and Michaelwood service stations) had applied to the High Court for a judicial review of the Council's decision to grant planning permission. Joined in the action were CAMSA and the Parish Councils of Brookthorpe-with-Whaddon and Harescombe. The case was heard in the High Court in Birmingham on 17 and 18 January 2012. By 8 February 2012, the High Court had dismissed all challenges to the planning application
One of the factors that helped the development gain planning permission was the inclusion of a green roof

Description: Tony Smith image Alamy R9GTYF - KFC, also known as Kentucky Fried Chicken, is an American fast food restaurant chain that specializes in fried chicken. Headquartered in Louisville, Kentucky, it is the world's second-largest restaurant chain (as measured by sales) after McDonald's, with almost 20,000 locations globally in 123 countries and territories as of December 2015. The chain is a subsidiary of Yum! Brands, a restaurant company that also owns the Pizza Hut, Taco Bell, and WingStreet chains.
KFC was founded by Colonel Harland Sanders, an entrepreneur who began selling fried chicken from his roadside restaurant in Corbin, Kentucky during the Great Depression. Sanders identified the potential of the restaurant franchising concept, and the first Kentucky Fried Chicken franchise opened in Utah in 1952. KFC popularized chicken in the fast food industry, diversifying the market by challenging the established dominance of the hamburger. By branding himself as Colonel Sanders, Harland became a prominent figure of American cultural history, and his image remains widely used in KFC advertising. However, the company's rapid expansion overwhelmed the aging Sanders and he sold it to a group of investors led by John Y. Brown Jr. and Jack C. Massey in 1964.
KFC was one of the first American fast food chains to expand internationally, opening outlets in Canada, the United Kingdom, Mexico, and Jamaica by the mid-1960s. Throughout the 1970s and 1980s, it experienced mixed fortunes domestically, as it went through a series of changes in corporate ownership with little or no experience in the restaurant business. In the early 1970s, KFC was sold to the spirits distributor Heublein, which was taken over by the R.J. Reynolds food and tobacco conglomerate
that company sold the chain to PepsiCo. The chain continued to expand overseas, however, and in 1987, it became the first Western restaurant chain to open in China. It has since expanded rapidly in China, which is now the company's single largest market.
