The name comes from láng, the Hungarian word for flame.
Up to the mid 20th century, bread was baked once a week due to the cost of heating up the large oven and the lengthy process kneading up to 80 pounds of dough. Because the bread loaf, typical to Hungary, was 6 to 10 pounds each, traditionally they used to bake smaller (1-2 pounds) cipó rolls for the evening and the next day. The name lángos (literally meaning flamed) comes from baking these flat breads in the morning while the oven was still heating up. Lángos were also used as a side to lunch
The dough for lángos is made of water or milk, flour, yeast, and salt. The ingredients are worked together either by hand or a kneading machine. As the yeast starts to metabolize the carbohydrates in the flour, carbon dioxide is released which causes the dough to rise, creating the air bubbles in the lángos. The dough is basically the same as pizza dough, but it is not baked but fried in oil. Adding sour cream, yoghurt or mashed potatoes to the dough is optional but highly encouraged, in the latter case it is called potato lángos (in Hungarian krumplis lángos)
In the early 2000s, some people built small, portable clay ovens and started to sell oven baked lángos, called kenyérlángos (bread-lángos) on festivals and fairs. Although reminiscent of the traditional lángos, it is more like a pizza with sour cream, onions and bacon.
Lángos is popular all year long. As it is a rather affordable and simple food, it is often sold around bus stations, fairs, local markets and all over Eastern European countries during local celebrations or sport events. It is sold at many fast-food restaurants not only in Hungary but also in Austria.

In Scotland, the fish tends to be haddock, whereas in England it tends to be cod. This is because both fish tend to be sourced from Scottish waters in the North Sea and then shipped around the UK. Haddock was thought to taste better than cod when fresh, while cod tasted better a few days later. In the days before refrigerated haulage this meant that haddock would taste bad by the time it made it out of Scotland, while the cod would still taste good if it took a few days to reach its destination. Hake, pollock, whiting, and plaice are also seen at many chip shops. In Scotland, 'special fish' is a variant where the haddock is breadcrumbed instead of battered.

The modern fish-and-chip shop (chippy in modern British slang) originated in the United Kingdom, although outlets selling fried food occurred commonly throughout Europe. Early fish-and-chip shops had only very basic facilities. Usually these consisted principally of a large cauldron of cooking fat, heated by a coal fire. The fish-and-chip shop later evolved into a fairly standard format, with the food served, in paper wrappings, to queuing customers, over a counter in front of the fryers. As a boy, Alfred Hitchcock lived above a fish and chip shop in London, which was the family business. KFC was founded by Colonel Harland Sanders, an entrepreneur who began selling fried chicken from his roadside restaurant in Corbin, Kentucky during the Great Depression. Sanders identified the potential of the restaurant franchising concept, and the first Kentucky Fried Chicken franchise opened in Utah in 1952. KFC popularized chicken in the fast food industry, diversifying the market by challenging the established dominance of the hamburger. By branding himself as Colonel Sanders, Harland became a prominent figure of American cultural history, and his image remains widely used in KFC advertising. However, the company's rapid expansion overwhelmed the aging Sanders and he sold it to a group of investors led by John Y. Brown Jr. and Jack C. Massey in 1964.
KFC was one of the first American fast food chains to expand internationally, opening outlets in Canada, the United Kingdom, Mexico, and Jamaica by the mid-1960s. Throughout the 1970s and 1980s, it experienced mixed fortunes domestically, as it went through a series of changes in corporate ownership with little or no experience in the restaurant business. In the early 1970s, KFC was sold to the spirits distributor Heublein, which was taken over by the R.J. Reynolds food and tobacco conglomerate
that company sold the chain to PepsiCo. The chain continued to expand overseas, however, and in 1987, it became the first Western restaurant chain to open in China. It has since expanded rapidly in China, which is now the company's single largest market.

The first Express outlet was at the Markham Moor service station (A1 North), though only as an addition to the existing Little Chef menu there. However, only five restaurants were ever built on the roadside, and the idea was re-developed when Little Chef was taken over by Compass, with the Express take outs being set up in food courts, including one in the Eurostar terminal
Little Chef was a chain of restaurants in the United Kingdom, founded in 1958 by entrepreneur Sam Alper, who was inspired by American diners. The chain was famous for the Olympic Breakfast its version of a full English as well as its Early Starter and Jubilee Pancakes. The restaurants were mostly located on the roadside near A roads, often paired with a Travelodge motel, a Burger King and a petrol station. The chain was also located along motorways in Moto Services, for a time.
The chain expanded rapidly throughout the 1970s, and its parent company would acquire the Happy Eater chain in the 1980s, its only major roadside competitor. When its owners converted all Happy Eater restaurants to Little Chef in the late 1990s, this allowed it to peak in scale with 439 restaurants. Little Chef began to face decline in the early 2000s, this mainly due to the chain expanding too fast, meaning it could not properly invest in all of its locations. Compared to its peak in the late 1990s, by 2005 the chain had lost almost half of its locations.
In 2007, the chain entered administration, marking 41 out of 239 restaurants to close. This was followed by another closure programme in 2012 to reduce the chain to 94 restaurants. In early 2017, licence owners Kout Food Group sold the remaining 70 locations to Euro Garages, who would convert the restaurants into their partner franchises such as Starbucks, Subway and Greggs.
