Abomasum (reed) tripe is seen less frequently, owing to its glandular tissue content.
Washed tripe is more typically known as dressed tripe. To dress the tripe, the stomachs are cleaned and the fat trimmed off. It is then boiled and bleached, giving it the white color more commonly associated with tripe as seen on market stalls and in butchers' shops. The task of dressing the tripe is usually carried out by a professional tripe dresser.
Dressed tripe was a popular, nutritious and cheap dish for the British working classes from Victorian times until the latter half of the 20th century. While it is still popular in many parts of the world today, the number of tripe eaters, and consequently the number of tripe dressers, in the UK has rapidly declined. Tripe has come to be regarded as a pet food, as the increased affluence of postwar Britain has reduced the appeal of this once staple food.
It remains a popular dish in many parts of continental Europe such as Portugal, Spain, France and Italy. In France, a very popular dish, sold in most supermarkets, is tripes à la mode de Caen. In Spain callos a la madrileña are served as tapas in many restaurants as well as in supermarkets. The most beloved and celebrated dish in the city of Porto and surrounding areas, in Portugal, is 'tripas à moda do Porto', a tripe stew made with white butter beans, carrots, paprika and chouriço. It is so loved that locals are called 'Tripeiros', in an homage to the 'tripa' (tripe).

provide food club services for the benefit of people on low incomes in a manner that support community wellbeing and integration.
Eggcup stops surplus food from going to waste and gets it to people instead. Our low-cost, weekly food scheme helps our members to save money on food, and that makes life more affordable for those in our community on a tight budget.
We have two Community Food Outlets for our members, one in Lancaster and one in the West End of Morecambe. We have a professional 5* food warehouse at our Lancaster base.
Most of the work in our warehouse and outlets is done by volunteers who want to contribute to building a stronger community and making good use of surplus food.
Some of our volunteers are members we're all pulling together! We also run a low-cost Buying Cooperative, where we pool our collective buying power to get great discounts. The Buying Cooperative is for Eggcup members and for other community food organisations across the district.

It is manufactured by Abba Seafood. Kalles Kaviar is mainly made of salted cod roe (Gadus morhua), sugar, canola oil and spices. It is officially credited as having been introduced in 1954, but probably existed even earlier as advertisment for the product appeared in newspapers as early as 1950. The product soon became considered a classic product in the Swedish market, internationally recognised as a Swedish product.
The tube label has maintained the same design from the beginning, and depicts the son of the then-CEO of the manufacturing company, Carl Ameln. The name Kalle was used because it was a popular name in the 1950s when it was first created.
The tube had to be made of aluminium rather than plastic because kaviar cannot stay fresh when in contact with air, and plastic tubes become filled with air when the contents have been squeezed out, whereas aluminium remains in the form it was pressed into.
In 2011, IKEA replaced Kalles Kaviar with its own brand of caviar. This led to backlash, leading to IKEA returning the product to its shelves within a few years

Greasy chicken bones litter the streets like cigarette butts in a borough caught by Kentucky fried fever. Abdal Khan, of Chicken and Pizza' on Amhurst Road, dubbed Hackney the chicken capital of the world and it's hard to see otherwise.
The growing abundance of fried food shops is underlined by the fact that there are now more than two for each secondary school in the borough.
The shops centre on Stoke Newington and other districts with the right demographics. These are targeted operations not just random start ups.
Residents should be careful though when ordering their wings, many chicken shops have a poor food rating. Dixy Chicken' in Hackney Central, one of the 20 takeaways listed on the database, has a paltry one out of five star rating, indicating that the establishment is failing to comply fully with Britain's food hygiene laws.
A 25-year-old Hackney fried chicken shop worker of five years, spoke of the industry's bad practice.
After cooking a piece of battered chicken, you can only serve it within an hour, but staff leave it on a low heat all day, creating a breeding ground for bacteria, he said.
They do it to cut costs and get the most out of their stock.
It should be noted that the problem is not limited to chicken shops. There are around 160 fried food takeaways in the area, which equals eight per square kilometre. With this concentration, residents are never more than a 10 minute walk away from a deep-fried treat. A chicken and chips meal will set you back £1, making it a clucking good deal.

The Monarch decides who may grant Royal Warrants. These are known as the Grantors. Today HM The Queen and HRH The Prince of Wales grant Royal Warrants. Her Late Majesty Queen Elizabeth The Queen Mother and HRH The Duke of Edinburgh were also grantors of Warrants.
There are currently over 800 Royal Warrant holders. Charitable soup kitchens proliferated in nineteenth-century Europe and North America. Three soup kitchens operating in England between 1870 and 1910 are compared
two were Jewish soup kitchens, the other was an English (non-Jewish) charity. Institutional buildings are often analyzed using Foucault-derived models of control based on surveillance and punishment. Such models may not explain fully charities, their buildings, or their method of reform. Historical archaeology can show how charity that coerces or dehumanizes the poor is less likely to create lasting improvements in the behaviors it is seeking to reform than charity that adopts a more positive approach.
The Manchester Jewish Soup Kitchen
Documentary History
The Jewish soup kitchen in Manchester had its first meeting in November 1895 (Manchester Jewish Soup Kitchen 1912). The committee was formed by local rabbis
the women present formed a sub-committee to organize fund-raising. By 1904, half of the main committee was made up of women. The kitchen opened three times a week from Chanukah (i.e., in early 1896) until Passover. The committee adopted the name The Soup Kitchen for the Jewish Poor Manchester, after the London soup kitchen. In 1908 the name was changed to The Manchester Jewish Soup Kitchen.
The committee located a site on the corner of Exchange Street (now Empire Street) and Southall Street, opposite the northeast corner of Strangeways Prison, on the western side of the Jewish community. Plans were drawn up by architect Thomas Bushell. Fundraising for the new building included a penny-brick fund by which less well-off donors could sponsor a brick for the cost of one penny.
Michael Marks, the co-founder of department store Marks & Spencer and an active committee member, made a substantial donation in 1905 for funding tickets

There are dramatic changes afoot in the world of Quick Service Retailing', driven by new levels of consumer expectations and dynamic new food experiences. But are a few chunks of tangy pineapple on a pizza really so bad? It doesn't seem possible considering pineapple made it to the list of 10 most popular pizza toppings. (Although it only makes the ninth spot, just ahead of spinach.)
To get to the bottom of this debate and decide on a winning side once and for all, we reached out to pizza chefs across the US for their opinions on the appropriateness of pineapple. As the gatekeepers to pizza, we felt they must have a good grasp of what constitutes an acceptable pizza topping.
In a somewhat surprising turn of events, it seems that many pizza chefs, even the old-school Italian ones, have given in to the requests of the masses.
As it turns out, the customer is always right, as the saying goes, even when it comes irreverent requests such as pineapple on traditional pizza.

Chef Anthony Carron of 800 Degrees Pizzeria is one chef who has had to put his own beliefs aside in order to make his customers happy. Carron, who is adamant that he personally would never eat pineapple on a pizza, nor would any self-respecting Italian, has had to change his stubborn attitude towards pineapple on pizza. When he first opened 800 Degrees, he refused to carry it on principle, but it was literally the number one requested topping that we did not carry.

Finally relenting after a few years on behalf of their great customers, Carron now allows pineapple in his pizzeria, under one condition. Refusing to just serve garbage canned pineapple tidbits he instead buys whole, fresh Hawaiian gold pineapples, which are then peeled and diced by hand, tossed with extra virgin olive oil and sea salt, and roasted in their wood-burning ovens until they are caramelized, which actually sounds incredibly delicious.

Description: Tony Smith image Alamy 2A4PJNY - Wanting to increase their presence and market share, Greggs opened their first Moto-operated franchised bakery at Lymm truckstop in early 2012, with high hopes. Following good sales a second store was opened at Birch eastbound the following June, and it was then confirmed that most Moto services would get one. Moto have also been opening franchises at some Extra services.
What makes Greggs a little bit different to other new brands is that most units have been modified so customers can visit without entering the main amenity building. This helped Moto's tax accounts: by not offering the option of eat-in food, the food was exempt from VAT, although the notorious pasty tax complicated things. As with most service station franchises, prices are inflated and the menu is altered slightly.
Greggs had never agreed to franchised stores before the Moto deal, but following its success they opened franchises with Euro Garages and Applegreen too (in the UK only). Greggs was now being added to petrol stations across the country, and Euro Garages started introducing the country's first Greggs drive thrus.
On the baked goods front, Moto had been using Upper Crust as a bakery brand, although this sold fewer hot goods and began to lose ground to Moto's other stores. In 2011 they also introduced West Cornwall Pasty Co., mostly in stands outside the services. Other operators have responded to Greggs with the likes of The Cornish Bakery, Pret a Manger and The Pasty Shop.
In line with Greggs's rules, service stations in the West Country are not allowed to sell Cornish pasties, for fear of upsetting the locals.

A cow is broken down into what are called primal cuts, the main areas of the animal which include the Loin, Rib, Round, Flank, Chuck, Sirloin, Brisket and more.
These primal cuts are then broken down into sub-primal cuts, including specific steaks and chops: flank steak, flat iron steak, filet mignon, rib eye.
These are usually leaner cuts of beef, best grilled or fried and work better with high heat. It's the T Bone and Porterhouse Steaks, the Tenderloins, cuts of meat that respond better to dry heat cooking.
Filet Mignon, Bavette, Tri-Tips, Strip Steak and Roasts - coming from the rear of the animal, these are also leaner cuts, certainly not the best beef choice f you want to slow cook. The Sirloin family is best for grilling, skillet and stir-fry with high, dry heats.
Ribeye Filet, Ribeye Cap, Ribeye Steak. These cuts are getting fattier, meaning some of them are better for slow cooking and roasting. Not all the cuts in the rib family work well with slow cooking methods: Ribeye Steak, for example, will always kick better grilled or fried in a skillet.
Blade, Chuck Eye, Country-Style Ribs, this is where the slow goodness starts to come to play with some good cuts for pot roasts. Don't get us wrong, you'll also find lots of chuck cuts are good for grilling: Top Blade, Ranch Steak, Shoulder Steak. If you only understand one section, Chuck is the one as there's a cut for every style of cooking.
You can't really go wrong with brisket, whether you choose Flat or Point cut - they both want to be slow cooked. For us, Brisket Point works better than Brisket Flat, the flat cut is a bit leaner. The revival of the Altrincham Market is nothing short of remarkable. From 1290 (yes, 1290!) the market had been at the centre of community life in Altrincham. Throughout the centuries, the market would have been where townsfolk gathered to buy goods, make a living, and spend time in the company of their neighbours.
And yet, the second half of the 20th century brought a period of stagnation. With the fortunes of the town on the downturn and the population size decreasing year over year, the historic market was being run by the council with little love or care. In fact, around a decade ago, Altrincham was voted as having the worse high street in Britain.
So, what has changed?
Well, Nick Johnson came onto the scene. Nick was a property developer and saw something in Altrincham that others failed to spot. In 2013, he won the contract to run the market and quickly set about changing the face of it and in turn Altrincham.
Nick gave the Victorian building a makeover. Cleaning it from top to bottom and restoring some features that had been neglected. He then got to work contacting some of the area's best, local food vendors.
Nick did the same in Manchester city centre with the Mackie Mayor food hall, the big sister of Altrincham Market House. We previously wrote about Mackie Mayor here.

The revival of the Altrincham Market is nothing short of remarkable. From 1290 (yes, 1290!) the market had been at the centre of community life in Altrincham. Throughout the centuries, the market would have been where townsfolk gathered to buy goods, make a living, and spend time in the company of their neighbours.
And yet, the second half of the 20th century brought a period of stagnation. With the fortunes of the town on the downturn and the population size decreasing year over year, the historic market was being run by the council with little love or care. In fact, around a decade ago, Altrincham was voted as having the worse high street in Britain.
So, what has changed?
Well, Nick Johnson came onto the scene. Nick was a property developer and saw something in Altrincham that others failed to spot. In 2013, he won the contract to run the market and quickly set about changing the face of it and in turn Altrincham.
Nick gave the Victorian building a makeover. Cleaning it from top to bottom and restoring some features that had been neglected. He then got to work contacting some of the area's best, local food vendors.
Nick did the same in Manchester city centre with the Mackie Mayor food hall, the big sister of Altrincham Market House. We previously wrote about Mackie Mayor here.

By the 1980s, St George's Market had developed into a general market and it became the last of Belfast's thriving Victorian markets. The market was pressured with increased maintenance costs and changes to hygiene regulations, among other issues, and Belfast City Council decided to source other uses for the listed building. A campaign backed by the city council, traders and the general public resulted in a Heritage Lottery Fund-backed £3.5 million refurbishment programme assisted by the Environment and Heritage Agency. Brick and stonework that had badly deteriorated was returned to good condition, and special bricks were produced in England to match the original unusually sized bricks. The fully renovated St George's Market reopened its doors on 14 May 1999.
St George's Market is primarily used as a market, however a number of other events are held at the site. These range from food festivals, art initiatives, exhibitions, charity launches, fashion shoots and live music events. Local software company Northbrook Technology hold their annual Staff Christmas Party at the venue.
The market has won a number of recent awards, including being voted Best Large Indoor Market 2014 and as one of the UK's top five markets by the National Association of British Market Authorities in 2006, and winning third place in the best markets category of the Observer Food Monthly/Waitrose Awards in 2004

Pie, mash and eel shops have been in London since the 19th century, and are still common in East and South London and in many parts of Kent and Essex. The shops may serve stewed or jellied eels.
During the Victorian era, industrial air pollution tended to be worse in the east and south east of London because of the prevailing westerly wind, with the result that the East End was settled more by the working classes, while the western part of the city was home to higher social classes. The working class were poor and favoured foodstuffs that were cheap, in plentiful supply and easy to prepare.
The savoury pie had long been a traditional food, and its small handsized form also made it a transportable meal, protected from dirt by its cold pastry crust, and filled with cheap minced meat, usually mutton. Adding cheap mashed potatoes, together with a sauce made with fish stock and parsley, made it a plate-based sit-down meal.
Jellied eels are often associated with pie and mash, as European eels cooked in gelatine also became a common worker's meal since eels were one of the few forms of fish that could survive in the heavily polluted River Thames and London's other rivers at that time. Supply was plentiful through the late 1800s, particularly from the Dutch fishing boats landing catches at Billingsgate Fish Market.
Since 2010, as revealed in a joint study by the Zoological Society of London and the Environment Agency, the number of eels captured in research traps in the River Thames fell from 1,500 in 2005 to 50 in 2010, meaning most eels used in pie and mash shops are now from the Netherlands and Northern Ireland.

But times are changing and people seem to want universal food such as pizza and burgers. Pie and mash has a limited regional appeal.
Traditionally pie and mash dates back to the 19th century, when Dutch ships delivered live eels, which were used in pies, to Billingsgate Market.

Slightly cheesily at the official opening Councillor Simon said, \u201cIt\u2019s a great vote of confidence that Brampton\u2019s has chosen to set up in Crewe and can only add to the town\u2019s economic growth. I have also become a personal fan and regularly pop in for a pie at lunchtime, as they are located irresistibly close to Crewe\u2019s Municipal Buildings.\u201d I did not check with Dave and Sarah how many pies had in fact been purchased / consumed by the local elected elite, when I popped in to say hello to my old work mate.
Crewe is in fact slightly south of what I would probably term 'Pie Central' in the UK, Wigan. While justly famous for its 1970's Northern Soul 'Wigan casino' pies are a large slice of the Wigan economy.
The annual World Pie Eating Championship is usually held at Harry's Bar on Wallgate, Wigan. The competition has been held since 1992. In 2006, due to relentless pressure from the Vegetarian Society a vegetarian version was added.
In the 2006 competition, the meat and potato pies were all 12 cm (5 in) in diameter with a depth of 3.5 cm (1.5 in). In the separate vegetarian contest, the pies were 10 cm (4 in) by 3 cm (1.2 in).[3]
In the 2007 competition, entries included a competitor's dog, Charlie, who had eaten 20 pies and damaged a further 10 the night before the competition, nearly jeopardising the event.
The last two years victors have been
Fred Wyatt, a 61-year-old warehouse packer won the 2008 Championship, which was broadcast live on the internet by pay-per-view. In 2009
Barry Rigby, a warehouseman won, eating a pie in a record 45 seconds.
Controversy was caused in 2005 when pies were imported (out of the Wigan area) from nearby Farnworth, Bolton and local Wigan pies were sidelined, resulting in a four-man strong protest. A similar situation arose in 2009, with pies being sourced from Adlington.
More controversy was caused in 2006 when the competition was changed (to meet government healthy-eating guidelines) from the number of pies consumed in a given time, to the fastest time to consume a single pie.
Wiganers are proud to be called pie-eaters, but the nickname is not thought to be because of their appetite for the delicacy. The name is said to date from the 1926 General Strike when Wigan miners were starved back to work before their counterparts in surrounding towns and were forced to eat 'humble pie'.

She does a really comprehensive breakfast selection including my favourite black (blood) pudding. The \u00a33.30 belly buster (thats barely 3 Euros 60, what are you waiting for, get over to Roman Northwich, in that damn chunnel, swap those croisants and churros for some proper breakfast!!!). A large batch filled with two bacon, one sausage, egg, tomatoes, mushroom, black pudding and cheese. Theres also version for the Atkins (low carb) generation and our vegetarian bretheren.
You can choose your own bread (thankfully not the identikit bread at the Subway franchise further into town), but your choice from a whole raft of types. Fillings cover all tastes from plain turkey salad to Feta &
Pesto, Brie and Cranberry, roasted vegatables, smoked and cream cheese.

Its one of my favourite spices, ground on to most things I eat if needed or not. Also, a few slipped into boiling rice to go with a curry sauce.
Black pepper is a native plant of South India and is extensively grown there and elsewhere in tropical regions. The pink balls of the fresh fruit can be seen on the trees and when crushed in its raw state has a sweet pepper aroma. Green peppercorns are just the immature fruits.
Cochin in southern india is a major spice centre and it is easy to visit some of the spice warehouses etc. I remember when backpacking around Cochin there was the smell of pepper in the air and quite often you were crushing escapee peppercorns underfoot - marvellous.

It used to be Rank, then Granada, was Forton, then Lancaster, then Lancaster (Forton).
The tower is called 'The Pennine Tower', and when it opened it had a restaurant with a panoramic view. However, the tower fell short of the Health and Safety regulations for the number of emergency exits required in a public building, so it had to be closed. It's now only used for staff training and offices.
The tower is unique to the services, but Rank built slightly smaller versions at other services of theirs such as Hilton Park,which has suffered exactly the same fate. Although the one here is the 'daddy' (as they say).
In 2008 the services won a five star loo award, one more than in 2006. Worth sharing that with you, in case you might consider holding on until Knutsford.
Rumours that the cafe used to revolve inside like 'Piz Gloria' in Switzerland where the famous James Bond was filmed'on her Majesty's Secret Service are untrue. (apparently).

The apricot (Prunus armeniaca) is a species of Prunus, classified with the plum in the subgenus Prunus. The native range is somewhat uncertain due to its extensive prehistoric cultivation.
The apricot was known in Armenia during ancient times, and has been cultivated there for so long it is often thought to be native there. Maybe a mantra for our current troubled times?
Perhaps we should worry about our carbon footprint, walk a bit more rather than drive as much? Possibly eat less supermarket food, consume in season and cut down on our food air miles ? Think more about our neighbours, come to think of it, do you even know your neighbours? Some of our prejudges should maybe be put aside, the world's more interesting when it's diverse.
I must have passed this on Orford road coming into Padgate, Warrington Cheshire a few dozen times. To stop at the traffic lights makes you consider these four words a little more deeply. Next time you wait there to follow the A50 or to go to Birchwood following the A574, consider these words.
